Thoughts on 2021: Miyoko’s oatmilk butter became a regular feature in 2020 which has been delicious yet I think it caused my blood cholesterol level to rise as it contains coconut oil (saturated fat). So I’ll be cutting it out in 2021. If my levels don’t fall sufficiently, I’ll cut into my use of extra virgin olive oil (EVOO). I will go oil-free if I need to, however I know that I eat far more cruciferous vegetables (roasted) and salads when I include some high quality EVOO in my diet.
Update 3/1/2021: I just received my bloodwork from a recent donation and my cholesterol went down 30 points by quitting coconut oil for 2 months. I have achieved my goal and Miyoko’s butter will stay out of my diet. Details: 12/28/2020 – 164.0 mg/dL; 2/25/2021 – 131.0 mg/dL
