You might be thinking “it’s pretty ironic that a Food Coach isn’t going to tell me what to eat.”
And if you’ve been following me via newsletter or blog, you’re probably thinking “that’s all Carla does. She tells me what to eat!”
BUT…
I don’t make meal plans for you nor do I draw up shopping lists for you to use.
Why? (It would be so much easier if you did, Carla!)
Because telling you what to eat is like telling you what to wear.
I don’t know your favorite color, fabric or style any more than I know your favorite vegetable, texture or flavor. My favorite fruit that I eat often might be your least favorite and vice versa. (And not everyone likes sea weed for breakfast like I do!)
You might have allergies or special dietary considerations (low sodium, for example) that I don’t have. You will be your own expert in those areas.
Not to mention, my stores are different than your stores so our selection, availability, regional & seasonal choices and prices will vary.
What I do offer you, as a Food Coach, is the important information below the food…the foundation of nutritional understanding so that you can make the best choices for yourself and those you feed.
Through my free 8 First Steps to a HAPPY™ Kitchen guide and The 9th HAPPY™ Step free 21 day online food course based on Michael Pollan’s book Food Rules, I help you understand food basics so that you can add your preference, your flair and favorites to your meal plan and shopping lists.
I want you to own and LOVE your healthful diet so that you will stick with it for life. And the only way to achieve that is to study food and make your diet your own.
There are many Food Coaches who will supply menus and shopping lists to make food procuring, preparation and eating easy & mindless. Some people succeed with this method.
But what happens when the menus & lists stop?
Many followers lose their way because they never really understood the path they were on to begin with, rather just living by the coached cues. They understood the “what” but not the “why.”
I’d rather see you take more time in mindfully learning the bedrock principles and guidelines to eating smartly while adding in your personal touches, traditions & knowledge so that you can incorporate the new information with the old, making a good new mix for your long, healthful haul.
Your diet is your destiny. What you eat today creates your tomorrow body. It’s yours. Own it. Love it.

Carla, after taking your program, learning it well and following it as best as I could, it became a bit problematic because I was gaining weight. But the benefits were too great to abandon the program. So, with your help I adjusted it and changed it to meet my internal needs. Now, a year later I am exactly the weight I want to be, and am getting all the benefits of a low fat, anti-inflammatory “almost vegan” personal diet. I have thanked you before, but this post motivated me to thank you again. Paul
